Input lag itself, the delay between pressing a button and seeing it happen on screen, is the number that matters most for anything fast-paced or competitive.

At this budget you're rarely getting all of that maxed out on every input. A common pattern is a set with only one or two HDMI 2.1 ports rather than all of them, or 120Hz support that's capped below native 4K resolution. Whether that trips you up depends on your setup - one console plugged in permanently is a different question to switching between a console and a gaming PC.
